Changes in Root Starch Contents of Sweet Potato Cultivars During Storage

In order to compare the changes in root starch content among different sweet potato cultivars during storage period, the contents of starch, reducing sugars and amylase activities of four sweet potato cultivars cultivated in Sichuan were determined. The results showed that the starch contents of 3 cultivars (Nanshu 88, chuanshu 34 and Liyuan 1) were dramatically reduced at a rate more than 10% in one month and 30% in three months, while Xushu 18 displayed a much lower reducing rate of its starch content during storage, i.e., 5% in 2 months and 24% in 3 months. However, the amount and activity of amylase of Xushu 18 did not show apparent changes during storage. The results from the analysis of the reducing sugar of Xushu 18 showed that the content of reducing sugar was the highest in the 2nd month. Therefore, Xushu 18 is much better than the other three cultivars in the character of starch storage. Fig 6, Ref 18
